Brewing Process

Stage 1 Processing the malt
The malted barley is ground in the mill to a coarse flour.

Stage 2 Making the malt extract
The grist is mixed with hot water, starch is broken down Into fermentable sugars. The liquid (sweet wort) containing sugars is drawn off and transferred into the copper.

Stage 3 Boiling with hops
The sweet wort is boiled with the addition of hops to produce a bitter hopped wort. Boiling also helps to remove unwanted material, which could produce a haze in the finished beer. After boiling the beer is pumped through a cooler on its way to the fermenting vessel.
Stage 4 Fermenting with yeast
Yeast is added to ferment the wort. The yeast converts sugar to alcohol and carbon dioxide. Other flavours develop.
Stage 5 Maturing the beer
After fermentation, beer is moved into storage tanks. Casks are filled with beer and a secondary fermentation takes place which gives the beer its sparkle.

Stage 6 Brewery conditioned beer
After maturation in the storage tank the beer is filtered and carbon dioxide added. Conditions can be more easily controlled in the brewery to consistently produce bright beer for packaging. The beer is then passed through a second filter before being packaged into a keg or bottled.
